CRICKET PROTEIN CROQUETTES
4 cups of mash potato instant/homemade
2 tablespoons milk of your choice
1 to 2 green onions, chopped finely
1 tablespoon Mayonnaise ( low fat )
4 tablespoons Chirp Nation cricket powder
1 tablespoon flour of your choice
1 whole egg
2 to 3 cups bread crumbs
Salt and pepper to taste
Oil for baking tray
Preheat oven to 180 Degrees Celsius
Combine the Mashed potatoes, milk, 2 tablespoons of green onions, 3 Tablespoons of Chirp Nation Cricket Powder, Mayonnaise and salt and pepper together in a bowl.
Mix until the ingredients are blended and set in your refrigerator for 30 minutes.
Beat the single, whole egg and place in a small dish.
In another dish, combine bread crumbs and 1 tablespoon of Chirp Nation Cricket flour for your breading mixture.
Remove the chilled mashed potato mix from the refrigerator and role into palm sized balls
Flour hands to prevent them from sticking
Dip the balls into the egg
Coat at the ball with the bread mixture and place onto baking tray. Push down gently to flatten slightly
Bake in the oven for 15-20 minutes ( Croquettes should be golden brown)
Enjoy these with your favorite dip. They are also delicious with some Parmesan cheese sprinkled on top.
PS. If you love cheese, and who doesn't? Add some grated cheese into your potato mixture for some extra cheesy loving.
