Cricket Powder Banana Muffins

Superfood Rich Banana Muffins made with ChirpNation Cricket Powder
             Serving Size: 12 muffins         |       Total time: 30 minutes 


    2 ripe bananas
     0.5 fresh banana 
    2 eggs
    100g Brown Raw sugar/ granulated sweetner
    50ml coconut oil (melted)
    130g flour (gluten free if desired)
    65g Chirp Nation Cricket Powder
    1 tsp baking powder
    1 tsp baking soda
    130g rolled oats (blended into powder)
    0.5 tsp cinnamon 
     1 pinch of salt
     0.5 tsp vailla extract
     1 tsp coco powder
     1/4 tsp nutmeg
     150ml milk
     1 tablespoons crushed walnuts (optional) 



      Step 1

      Preheat oven to 250 degrees Celsius  


      Step 2

      Peel and Mash bananas in a bowel


      Step 3

      Mix the bananas, eggs, raw brown sugar/sweetener, oil & vanilla extract 


      Step 4

      Blend oats into powder


      Step 5

      In another bowl combine and sift flour, cricket powder, baking soda, baking powder, blended rolled oats, salt, cinnamon, nutmeg, 


      Step 6

      Combine banana-mix with flour-mix, and slowly mix in Milk


      Step 7

      Gently mix in walnuts (optional step)


      Step 8

      Greece Muffin tray with oil 

      You may also use muffin liners if desired 


      Step 9

      Cut up fresh half banana to place ton top of each muffin


      Step 10

      Spoon the batter into the muffin trays and place 1 piece of banana on top of each muffin. 


      Step 11

      Bake in the oven for 15-20 minutes (depending on size of muffin)

      When inserting a toothpick it should come back clean


      Ps. Serve with some jam or butter or simply enjoy as is. 

      Best served warm.
